Peanut Butter French Toast Dippers

   


  Mornings can be a whirlwind when you have multiple mouths to feed at different times as they wake. Between signing last-minute permission slips to get the oldest out the door and keeping the four little ones in check, making breakfast is an ordeal. So I like to take the time to make ahead some quick breakfasts that don't take much time and they all enjoy.
     And these peanut butter french toast dippers really hit the nail on the head. I can make them ahead of time and reheat them throughout the week. The best part is all the different taste pallets can agree on these delicious dippers. Making the day start strong with a unanimous win for momma bear!


Ingredients
  • 5 Tbsp butter
  • Bread
  • Peanut butter
  • 1 large egg
  • 1/4 cup of milk
  • 1/4 tsp vanilla
  • 2 Tbsp sugar
  • 1 tsp cinnamon
  • 3 Tbsp sugar
  • Syrup


Directions
  1. Cut the crust off of bread (I save the crust and make plain french toast with it)
  2. Roll bread out flat with a rolling pin
  3. Coat one side of the flattened bread in peanut butter
  4. Tightly roll the bread so that the peanut butter is within (like a cinnamon roll)
  5. Whish together: milk, eggs, vanilla, and 2 Tbsp of sugar
  6. Melt butter over medium heat in the pan
  7. Coat the rolls in the egg mixture
  8. Carefully cook all sides of the dipper in the pan until crisp and slightly browned
  9. Whisk together the rest of the sugar and cinnamon in a shallow bowl
  10. Remove dippers from pan and toss in a bowl of cinnamon and sugar mixture
  11. Serve with syrup for dipping or refrigerate and reheat as necessary throughout the week!
  12. Reheat at 325° for 5-8 minutes on an aluminum-lined baking sheet.
